Roses and chocolate make for a romantic combination; today we launch an elegant truffle that encompasses both. Creating this truffle was a little trickier than we originally thought; many chocolatiers use a syrup base for ‘rose creams’ which is okay if paired with dark chocolate but with milk chocolate it becomes a little too sweet. So rather than adding flavour to a syrup base, we created a simple milk chocolate ganache (chocolate and cream) and added a few drops of essential rose oil, being extra careful not to overpower the chocolate and piped it into a thick milk chocolate shell. We finished with a little dark chocolate to balance the sweetness. The result is a fine milk chocolate with a delicate floral aroma of rose.
