Our Gin & Tonic truffles officially launch tomorrow. Here’s a little background about our recipe for the truffle, it takes inspiration of course from the now world famous cocktail. The most common recipe is Gin, tonic water and a wedge of lemon or lime. We did some research on how some of the world’s top chefs prefer to serve this drink and many added a sprinkle of cinnamon to the drink to ‘lift’ the flavour of the gin. So we created a milk chocolate ganache and added London Gin and a little lemon paste. Then came the hard bit – replicating the tonic water, it doesn’t really have much of a taste but adds plenty of fizz to the cocktail. That’s where the popping candy comes in which we added to the outer white chocolate shell. Finally we added cinnamon oil to milk chocolate and decorated the outside of the truffle. Might seem like too much trouble for a chocolate but we think the final result is outstanding and well worth the effort, cheers.
